Quinoa cooked with vegetables

I like this reasonably quick option for little ones on the days when would rather cook something not as baby friendly, so you have to go for separate options šŸ™ˆ

Quinoa is a great source of protein so could easily substitute for meat and it cooks very fast.

Ingredients:

4 tsp of dry quinoa

4 asparagus stalks cut into small pieces

1/2 carrot cut into small pieces

Half of tomato (peeled)

1 egg yolks (you can use whole egg)

Baby cheese to sprinkle

Put quinoa, carrots and asparagus into pan and cover with boiling water. Keep cooking for few minutes until everything is cooked through and soft. Cut tomato into small pieces over it, mixed together, add egg yolks (or whole) keep cooking until egg is cooked through, serve with baby cheese sprinkled over it.
