My sneaky way to add some extra vegetables into baby meal😋
(for approximately 15 mini pancakes)
3 tbsp of spelt flour
2 egg yolk
1 whole egg
200 ml of milk
8 cooked asparagus stalks
40 gram of greated cheddar cheese
Ghee butter for cooking (you can use whatever butter or oil you cook with)
Blend flour, egg yolks, egg, milk and asparagus, add cheese and stir the mixture.
Mixture ready to cook. Use tbsp as a measure ( 1tspb equals 1 mini pancake) Melt the butter, ladle some mixture into the pan, leave to cook, undisturbed, for about 30 secs. If the pan is the right temperature, the pancake should turn golden underneath after about 30 secs and will be ready to turn.
Serve it warm, it will be fun with melted cheese in 😋
Ps. They will freeze well, place sheet of baking paper between each pancake and stack together.
