I was lucky enough to spend mine in Poland, away from busy town, with my mum and dad and our close family in their caravan… perfect…so rare…so enjoyable time 🙂
we had lots of trips to forest where we could just simply pick up forest wild blueberries…mmm…
I am back to UK soon and will miss that time with my parents.
For the last few visits I have baked a cake for them, so while I am already away they can still enjoy a bit if my ‘personal energy’ in here 😉
So tonight we are baking a Forest’s beauties cake 🙂 with wild blueberries from local forest…local forest…I love that description 🙂
Ingredients for a large batch:
5 glass of spelt flour
2 glass of kefir or buttermilk
4 eggs
1 teaspoon of bicarbonate soda
1 teaspoon of baking powder
500 gram of forest wild blueberries
8 heap tablespoon of honey
150gram of ghee butter ( you can substitute with any butter)
1 teaspoon of cinnamon
Method:
Mixed all dried ingredients together, add melted ghee butter, buttermilk or kefir, eggs and stir well, add fruits and gently stir them in.
Put the cake into 180C preheated oven and bake for 40 minutes.
Slice of cake could be a perfect balanced option for breakfast or a healthy snack for afternoon cup of coffee:)
We already know what we having for breakfast tomorrow 😉
