Spicy chicken tights served with roasted sweet potatoes



3 crushed garlic cloves

2 onions roughly chopped

1 large red chilli, deseeded

4cm of peeled ginger

1 tbsp of grapeseed oil

1 tsp of crushed cumin seeds

1 tsp of crushed fennel seeds

4 cardamon pots crushed

1 tsp of paprika

1/4tsp of cinnamon

1 tsp of ground turmeric

300 ml of chicken stock

1 tbsp of brown sugar

2 tbsp of tomato pure

4 mashed fresh tomatoes

2 tbsp of flour (optional)



Blend the onion, garlic and chilli in a food processor. Cut each chicken tight into pieces. Heat the oil in large frying pan and add the chicken, cook over high heat until browned, drain and transfer to a plate. Add the onion paste into frying pan and cook until it is just beginning to colour. Add in the cumin, fennel, cardamom and ground spices. Cook for about one minute, then mix it in stock, sugar, tomato pure, mashed tomatoes and salt. Bring it to boil.

Put the chicken into slow cooker, pour the sauce in, cover it up and cook on low for 5-7 hours


You can serve with mash potatoes, rice etc. I choose roasted sweet potatoes which nicely balance spiciness of the sauce with sweetness of potatoes
