I was experimenting in the kitchen trying to find some substitute to ordinary noodles, and cabbage seemed perfect to me. Hope you will like that very light lunch idea. Great for this time of year.
Ingredients :
– Half of white cabbage thinly sliced*
– 1 red pepper
– Cup of mixed green beans
– Half cup of broccoli
– Handful of baby spinach
– Baby corn – few (3-4) sliced with angle
– Tiger prawn ( about 20)
– Half of sliced red chilli – optional
– Oyster sauce – 1 ½ tsbp
– 1 clove of crushed garlic
– Sweet soy sauce – 1 tsp
– Thin soy sauce – 1 tsp
– coconut oil – 1 tsp
serves 2 or 4 small portions
Place the cabbage and remaining vegetables in separate pots . Pour down boiling water over them and leave it for few minutes. Melt coconut oil in a heated wok and then add spinach leaves, crushed garlic, sliced chilli, strained cabbage and cook covered for maximum of 5 minutes until cabbage became soft and then add remaining strained vegetables, oyster sauce, soya sauces. Stir fry for few minutes, put tiger prawn into wok and carry on stir frying until prawns become pink and cooked.
*you can swap cabbage into your preferable noodles if you like, following the same methods of cooking
