banana and carob cake with walnut and tropical fruits crust

banana carob figs

 Ingredients:

Crust:

2 cups of walnuts
2 cups of dried tropical fruits

Filling:

2 chopped bananas
1 heap tbsp of carob powder
1 tbsp of lime juice
8 tbsp of melted coconut oil
2-3 tbsp of melted palm sugar

Ground walnuts in blender and combine with grounded tropical dried fruits. Mix it well by hands into dough. Place dough in cake tin and spread over it. Leave it in a fridge preferably for few hours.
Place chopped bananas into blender add carob powder, lime juice and mix it all together then add melted coconut oil and palm sugar ( when melting palm sugar use small heat, do it gradually, keep steering until becomes a liquid ) Spread banana mixture into tin cake over crust, slice figs and place them on top. Leave it in fridge to set for 6 -8 hours
