Parsnip cake


Lazy, rainy Sunday equals baking time! Which make that grey day a little bit more excited 😁


100g coconut oil, plus extra for greasing

135g coconut sugar

3 large eggs

250g spelt flour

2 tsp baking powder

1 tsp of ground ginger

1 tsp of ground cardamon

250g peeled and grated parsnip

1 peeled and grated apple

50g pecans, roughly chopped

50g of chopped dried mango

100g of white green and black chocolate (melted)

Pinch of coconut flakes for decoration


Melt coconut oil and coconut sugar in a pan over gentle heat, then cool slightly. Put the eggs into this mixture, then stir in the flour, baking powder and spices, followed by the grated parsnip, apple, chopped pecans and mango. Pour it down into previously greased baking tin, then bake for 40 min in 160° preheated oven. Cool the cakes slightly before spreading melted chocolate and then dust with coconut flakes.
